La receta la encontr\u00e9 en el libro \u201cbarbacoa\u201d de Steven Raichelen del que me declaro fan incondicional, s\u00e9 que este libro es pr\u00e1cticamente imposible de conseguir y es una lastima ya que es una mina y una fuente de inspiraci\u00f3n para todos los que amamos cocinar con fuego.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dos puntualizaciones para darle un toque ahumado y canalla a\u00f1adiremos astillas de madera de whisky que le va genial y el otro punto es que para aprovechar la brasa vamos a cocinar a la vez unas alcachofas, nos viene perfecto, de una tacada hacemos toda la comida, el entrante y el principal. Ahorramos tiempo y dinero y el resultado es un espect\u00e1culo. Una comida de lujo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mis costillas han resultado una delicia, as\u00ed que toma nota y regala a tus comensales con esta rica carne.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"800\" src=\"https:\/\/lacarboneria.es\/wp-blog\/wp-content\/uploads\/2025\/07\/costillas-buey-estilo-memphisinterior.jpg\" alt=\"costillas buey estilo memphis\" class=\"wp-image-188\" srcset=\"https:\/\/lacarboneria.es\/wp-blog\/wp-content\/uploads\/2025\/07\/costillas-buey-estilo-memphisinterior.jpg 800w, https:\/\/lacarboneria.es\/wp-blog\/wp-content\/uploads\/2025\/07\/costillas-buey-estilo-memphisinterior-300x300.jpg 300w, https:\/\/lacarboneria.es\/wp-blog\/wp-content\/uploads\/2025\/07\/costillas-buey-estilo-memphisinterior-150x150.jpg 150w, https:\/\/lacarboneria.es\/wp-blog\/wp-content\/uploads\/2025\/07\/costillas-buey-estilo-memphisinterior-768x768.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading has-text-color has-link-color wp-elements-a6fa6a42635194dd5e0c89f167b2ab02\" style=\"color:#fb0101;font-size:30px\"><strong>Ingredientes (4 personas) \u202f<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tiras de costillas de ternera.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Para el aderezo Memphis:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 cucharadas de piment\u00f3n dulce.<\/li>\n\n\n\n<li>1 cucharadita de copos de guindilla roja.<\/li>\n\n\n\n<li>2 cucharaditas de mostaza en grano.<\/li>\n\n\n\n<li>Sal gruesa.<\/li>\n\n\n\n<li>2 cucharaditas de pimienta negra.<\/li>\n\n\n\n<li>2 cucharaditas de az\u00facar moreno.<\/li>\n\n\n\n<li>1 cucharadita de ajo en polvo.<\/li>\n\n\n\n<li>1 cucharadita de or\u00e9gano seco.<\/li>\n\n\n\n<li>1 cucharadita de comino en polvo.<\/li>\n\n\n\n<li>100 ml\/ vinagre de vino blanco.<\/li>\n\n\n\n<li>100 ml de aceite vegetal.<\/li>\n\n\n\n<li>Romero.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-text-color has-link-color wp-elements-22df25b790210d181e0af727d6ed92e9\" style=\"color:#fb0101;font-size:30px\">Preparaci\u00f3n<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">1. En una bolsa de pl\u00e1stico junta todos ingredientes secos del aderezo, agite para que se mezclen bien, p\u00e1salos a un bol.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. Agrega los ingredientes l\u00edquidos y mezcla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3. Unta las costillas con la mitad del aderezo, guarda el resto para la presentaci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4. Las envolvemos en papel de aluminio y las dejamos macerar en la nevera. Lo perfecto es una noche.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5. Vamos a utilizar fuego indirecto, entre los dos soportes del carb\u00f3n colocaremos un recipiente met\u00e1lico para recoger la grasa, a\u00f1adiremos astillas de madera de whisky.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6. A\u00f1adimos las astillas de ahumado, colocamos la carne en un centro y dejamos que se asen a fuego lento.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">7. Cada hora le a\u00f1adiremos m\u00e1s astillas de humado y lo pincelaremos con el adobo cada media hora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">8. Cuando la carne est\u00e9 lista la pondremos en una tabla de cortar y la mojaremos con el aderezo reservado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">9. En el momento de servir acompa\u00f1aremos con una salsa picante.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-color has-link-color wp-elements-35a741be394adab51553deca9c281e34\" style=\"color:#fb0101;font-size:30px\">Consejos del chef<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Para asar esta carne tomate tu tiempo, tardamos casi sesenta minutos, calcula la hora de comer y enciende tus brasas con tiempo. En esta ocasi\u00f3n hemos utilizado carb\u00f3n de coco que tiene mucho aguante y es el m\u00e1s adecuado ya que el calor dura much\u00edsimo, me gusto mucho la experiencia, mis brasas eran perfectas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">No te olvides de poner una bandeja entre las brasas para recoger la grasa, ser\u00e1 mucho m\u00e1s limpio, fuera humos y limpiar tu barbacoa mucho m\u00e1s senillo. Deja macerar la carne, que coja sabor e intensidad, el resultado ser\u00e1 mucho m\u00e1s apetecible.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aunque tiene mucho sabor no puedo resistir el acompa\u00f1ar mi carne con una salsa canalla, tengo una buena colecci\u00f3n, les dan un toque a estas carnes tan sabrosas. Lo dejo pendiente para cont\u00e1rtelo en un pr\u00f3ximo post.
